Sausage Heaven, at 23 Holmes Road, Manurewa is where it all happens, the factory is a hive of activity, from 4.00am until 12.00pm, Monday to Friday (and some weekends).
All of the Mad Butcher Sausages are delivered nationwide to our 36 stores on a daily basis.

What is a sausage
Whether you call it a snag, a snarler, a boerwors, a bratwurst, a frankfurter, salami, a saveloy or a polony.
The humble sausage is defined in the Encyclopaedia Britannica as; "A meat product made of finely chopped and seasoned meat, which may be fresh, smoked or pickled and which is then usually stuffed into some sort of a casing"
The word sausage is derived from the Latin word salsus, which means "salted", and refers to a food-processing method that has been used for centuries back to the time of ancient Rome.
How are they made
A Mad Butcher sausage is made by firstly flaking different varieties of tempered meats. This is then added to our bowl chopper, which cuts the meats finely. We then add to the meats all our other ingredient’s that include special spices and seasonings, water, meat binders and cereal meal.
Once this mixture has been cut and mixed it is then run through an emulsifier, which again cuts the product into a fine finished product. It is then filled into the sausage casings through vacuum sausage filler. These machines can fill 210 kilos of sausage in around 15 minutes.
These filled sausages are linked into a plastic netting bag, some are pre cooked and some are fresh. They are then weighed, labelled as per variety then hung in our chillers, ready for delivery to our 36 stores.

The Mad Butcher Sausage Factory manufactures over 40 different varieties of sausages and produces around 75 thousand kilos per week for all of our 36 stores.
