Apriocot Filled Crumbed Breast with Rice Pilaf
Serves 2
Ingredients:
2 fresh Tegel Gourmet filled breasts 1 Tb olive oil1 onion, finely chopped 1 C rice 2 C chicken stocksalt to taste ½ C flaked almonds, toasted
Method:
1. Cook Tegel breast fillets according to the instructions on pack. 2. Heat oil in a heavy pan, add onions and rice, stirring until light golden. 3. Add the stock and salt. Bring to the boil, and reduce to a simmer. Cook covered for 12 minutes without stirring. Remove from heat and rest for 5 minutes. 4. Toss through the flaked almonds and serve.
